SLOW COOKER ROSEMARY GARLIC BEEF STEW
I absolutely love having friends and business associates over for meals. And I absolutely love cooking meals in our slow cooker. Using my slow cooker helps me with time management and is less clean up with our guests come over. I’d much rather time visiting them versus doing dishes! So for all you friends who have enjoyed this delicious stew at our home, and for all you future friends to come over, enjoy this delicious budget friendly meal.

INGREDIENTS
  • ½ lb. (4 medium) carrots $0.55
  • ½ sleeve celery $0.65
  • 1 medium onion $0.36
  • 2 lbs. sweet potatoes $1.00
  • 2 Tbsp olive oil $0.32
  • 4 cloves garlic, minced $0.32
  • 1½ lbs. beef stew meat $9.06
  • Salt and pepper $0.05
  • ¼ cup gluten free flour $0.04
  • 2 cups beef broth $0.30
  • 2 Tbsp Dijon mustard $0.24
  • 1 Tbsp Worcestershire sauce $0.06
  • 1 Tbsp soy sauce $0.10
  • ½ Tbsp brown sugar $0.02
  • ½ Tbsp dried rosemary $0.15
  • ½ tsp thyme $0.05
INSTRUCTIONS
  1. Dice the onion and slice the carrots and celery. Wash the potatoes well and cut them into one inch cubes. Place the onion, carrots, celery, and potatoes into a large slow cooker.
  2. Place the stew meat in a large bowl and season liberally with salt and pepper. Add the flour and toss the meat until it is coated. Set the floured meat aside.
  3. Heat the olive oil in a large heavy skillet over medium heat. Sauté the garlic in the hot oil for about one minute, or until soft and fragrant. Add the floured meat and all the flour from the bottom of the bowl to the skillet. Let the beef cook without stirring for a few minutes to allow it to brown on one side. Stir and repeat until most or all sides of the beef pieces are browned. Add the browned beef to the slow cooker and stir to combine with the vegetables.
  4. Return the skillet to the burner and turn the heat down to low. Add the beef broth, Dijon, Worcestershire sauce, soy sauce, brown sugar, rosemary, and thyme to the skillet. Stir to combine the ingredients and dissolve the browned bits from the bottom of the skillet. Once everything is dissolved off the bottom of the skillet, pour the sauce over the ingredients in the slow cooker. The sauce will not cover the contents of the slow cooker, but it’s okay. More moisture will be released as it cooks.
  5. Place the lid on the slow cooker and cook on high for four hours. After four hours, remove the lid and stir the stew, breaking the beef into smaller pieces as you stir. Taste the stew and adjust the salt if needed.
TIP – This dish tastes even more delicious if cooked in advance. If you aren’t in a hurry cook this meal on low for 10 hours and then when you are ready to eat, cook it on high for 4 more hours. The flavours blend and makes this an even more mouth watering dish.

Sue’s Famous Pickled Beets

This pickled beets recipe has been passed down from many generations in my family. I hope you enjoy making and eating this delicious canning recipe as much as my family does! It is very healthy for you too! Many people who told me they would NEVER eat beets are now pickled beet lovers thanks to this delicious recipe!

Recipe

  • Wash the beets and boil beets for 1 hour. (You want to be able to easier jab with a knife when they are done. You do not want them hard)
  • After they have boiled and are cooked, rinse beets in cold water. ****be sure to save the water the beets were cooked in.
  • Cut the beets and place them in sterile jars.
 

Liquid recipe – this makes 5 pint jars.

Be sure to save all the beet water until jars are filled with beets. We usually triple this liquid recipe so we have enough to cover the beets in the batch.
  • 1 ½ c of beet juice
  • 1 ½ c of vinegar
  • ½ T. salt (coarse pickling salt)
  • 1 c. sugar
Bring liquid to boil and pour over beets. After beets and liquid are in sterile jars, place filled jars in canning bath for 10 minutes. Be sure the water in the canning bath covers the jars lids by 2 inches. After 10 minutes in the canning bath, then sit jars on counter overnight. Be sure all jars have sealed before storing for the season.   Enjoy!

Healthy Paleo Granola

Healthy Paleo Granola Whether you are travelling this summer, or simply want a healthy snack to munch on, or want to spice up your favourite desert, this is a favourite granola snack that both my husband and I LOVE! This is great by itself or on top of your favourite fruit, yogurt or ice cream.  
  • 10 cups nuts (we use almonds and pecans most of the time)
  • 1 cup unsweetened shredded coconut
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 1 Tbsp vanilla
  • 1 Tbsp cinnamon
  Preheat oven to 350 degrees.  Mix all ingredients together in large bowl.  Spread onto parchment paper or baking dish with edges.  Bake for 20 – 30 minutes, stirring every 10 minutes, until golden brown. This is absolutely delicious!

Eating Healthy with Sue

Years ago I learned the importance of fueling our body with healthy, good quality food when I healed Crohns disease. Years later, after experiencing issues with my foot, I learned my body was completely filled with inflammation and that took me on a much deeper level of healing with food. I kept a daily journal of the food I ate and along with my weight. Within the first month of following this routine I lost 12 pounds and my husband lost 14 pounds. Now you can call me Skinny Sue!

Tips: I now only buy our boneless, skinless chicken breasts at Whole Foods and only when the butcher has ensured me that there are no additives of any kind injected into that chicken. My husband and I no longer eat in restaurants. We enjoy picnics everywhere we go. Our dogs love this because now they can travel with us more often. Of course we pack healthy snacks for them also – e.g. snap peas, green beans, and they love my homemade organic applesauce! No longer do I buy moisturizing creams. Our moisturizer is now organic coconut oil. I make homemade soap, body scrub and even our cleaning supplies.

As a result of spending the time to learn more about our foods, following The Hormone Reset Diet by Sara Gottfried, MD (this book is available for purchase under Shop > Book Recommendations ), preparing nd eating healthy I have lost weight, reduced inflammation in my body, healed my foot, became more energized, clear and focused, bought a new wardrobe, and created new memories on many great picnics! Now where can you find any negatives in all of this!
